That breakfast does sound good. Well, here's a trick I use to make it a little easier to make that kind of breakfast (I hope your husband's not reading this, then you will do this trick when YOU feel like having that for breakfast!) I put the potato in the microwave for 6 minutes (poke holes in the potato first!) then it's all soft and about 90 percent baked then it doesn't take as long to pan fry them. In fact, by the time you get everything else preped, the potatos are ready to go. :)
Ooookay, what am I looking at here, food? I see toast, an egg but what the heck is that dark stuff? I think I'm a little afraid to find out...

Yeah, sometimes I feel like cooking big breakfasts and sometimes I'm grateful for cold cereal. :)
