2 cups of mashed banana (Tip: If you don't have enough bananas, you can add applesauce to make up the difference. I had to do that today and it was still delicious!)
1 teaspoon vanilla
1/2 teaspoon cinnamon
Directions:

Preheat the oven to 350 degrees and lightly grease a 9x5 loaf pan.
Combine flour, baking soda, and salt. In another bowl, cream together
the butter and brown sugar. Stir in the eggs, mashed banana,vanilla and
cinnamon until well blended. Add the flour mixture and mix, by hand,
until it's just moistened. Pour batter into pan.
Bake for 1 hour @350. Allow it to cool for about 10 minutes before removing from pan.
